Hidden Kitchen Systems: Propane and Natural Gas
Gas as a fuel is the preferred choice of many cooks for its open clean flame and instant heating ability. If you choose gas powered appliances, either propane or natural gas, depending on your location, you’ll need to have black iron threaded gas pipes run into each appliance’s location. Like all piping these pipes are rigid, heavy and must be worked through walls and floors. Installation must be done by qualified installers. A leak is life threatening and could result in death and/or the destruction of your home. Properly installed, gas is very safe and burns cleanly.
Gas is pressurized by the supplying utility. However many restaurant style stoves with high BTU burners and broilers will not work up to their potential on the normal gas pressure supplied to your home. Restaurants typically have larger commercial gas lines that deliver higher pressure resulting in the fast, high heat that characterizes restaurant style cooking. If you want this blast of heat check with your appliance manufacturer for its requirements and your gas company to see if you can get the pressure you need before you buy these expensive appliances.
