Hidden Kitchen Systems: Chimneys and Architecturally Significant Elements

In older homes it is not unusual to run into a brick or block chimney during a kitchen demolition. Often these chimneys are no longer used or may be a part of the venting system for a furnace and hot water heater. If they still function as a chimney they cannot be removed without providing another way for hot gases to leave the house. Even if they are no longer used, removing them can be dirty and complex job. Often they are built into the structure of the house up through the roof necessitating roofing, framing repairs and removal of large quantities of masonry.
The temptation exists to use these chimneys for a wood stove or to add a fireplace. However unless they are in good condition and were built for these functions it may be dangerous to use them. Consult a qualified mason or engineer before using them. If you want a fireplace or wood stove in your kitchen you can always add a double-walled stainless chimney outside the building envelope.
Existing Architectural and Ornamental Elements
Like chimneys there may be certain items in your home that qualify as architecturally significant detailing and ornamentation that you may wish to integrate into your design to tie in the new kitchen with the older house. Trim and moldings, built-in cabinetry and pantries, unusual windows, fireplaces and other architectural elements can add a great deal to the overall ambiance of your design. However it requires careful planning to integrate them into your design rather than merely leaving them in place.
They may require refinishing, repairs or even relocation to fit your plans. If you have a part of a period crown molding, for instance, you can have it reproduced by a reputable woodworker or millwork shop and use its profile to tie in the old with new.
